Yesterday, we wrapped a 2-day catering opportunity for a video shoot. We provided breakfast and lunch for 45 people. For breakfast, we made huevos rancheros, corn beef hash, shrimp & grits, home fries and sausage, egg & cheese empanadas. For lunch, cast & crew enjoyed baked chicken, roast pork, baked ziti, rice, mac and cheese, cobb salad and veggie empanadas.
